Wood fired Moroccan Chicken over roasted veggies

the process for creating a great sandwich begins with great chicken

  • Cut up organic chicken into pieces 
  • Brine for 1 hour then rinse and rub with spice mixture 
  • Cut up veggies and place in large steel roasting pan
(no need to really season them they will season from the chicken juice)


  • Place chicken pieces over veggies 

  • Cover With Foil for first 30 min in 400-450F (200-230C)


Have a  "real" Beer 





  • Uncover and cook another hour or so, rotating . I also turned the pieces over
 

 Results were awesom !



 Veggies were Awesome too

 The next day for the leftovers I made some fresh Egg Buns

 Enjoy with Fresh Avocado
